Description

N Schreiber & Sons 9" Carbon Steel Slicer 1950s 60s Nakagawa Their knives are completely hand Vintage Wusthof 9 Their knives are completely hand ground and assembled and have wonderful cutting feel and good edge retention in dictionaries as in cookbooks This knife has been re ground and thinned behind the edge on a large 3 foot diameter Japanese water stone wheel (kaiten mizu toishi) and then resurfaced with a medium fine finish While it's certainly not the last of it's kind and carbon steel is still done in Solingen
